This is for strip loins 1" or thicker, makes a great succulent steak whether you fry or grill it! Just tried it yesterday!:drool:

Preheat oven to 275F, it'll take about 20 to 30 minutes to get the meat up to 95F and it will look disgusting. Then add S&P and either grill it or pan fry for a couple of minutes/side. Best thick steak I've ever had!

I know this ain't a recipe, just a technique. I think the technique is as or more important than the ingredients, for meat at any rate.

BTW, 120F is rare, 130 is medium rare and I think 140 is medium, I never check the temp on the gf's steak but you could kill someone throwing that thing! :sick :lol:

For Thanksgiving, one of my favorites and VERY healthy:

1 - Decent sized pumpkin
1 to 2lbs - Ground Turkey
1 Box - Wild Rice

Brown the Ground Turkey as well as cook the Wild Rice as explained on the packaging. Once they are both done, mix the Turkey and the Wild Rice together in a bowl. With the pumpkin, cut the top off (as if you were going to carve the pumpkin) and remove all of the innards as well as scrape the sides down a bit. Rinse out the pumpkin and then fill with the Turkey/Rice mixture. Place in an oven, preheated to 300

Emily's yummy lasagna

for my tasty lasagna you need:
1lb of hamburger or turkey burger
1 jar of tradtional spaghetti sauce
1 container of ricotta cheese
about a 1/2 pound or so of cooked lasanga noodles
1 pkg each of mozarella cheese and cheddar cheese
1/4cup parmesan cheese (dry kind)
1 bottle of crushed red peppers
few pinches of italian herbs
2 pinches of garlic powder
pinch of parsley

preheat oven to 350 degrees.in a pan brown turkey burger, shake red pepper over turkey burger (to your liking)mix sauce with burger. cook noodles accordin to package and drain. Dump ricotta cheese into a bowl and put the few pinches of italian herb mix and garlic into cheese, stir until blended well.
spray some non stick spray into a deep casserole dish. put noodles down, then some of the meat mixture and then dollop ricotta cheese on top and sprinkle with shredded cheeses. repeat and top with noodles and cheese and sprinkle parsley over all. cver with foil and bake for 20mins and then remove foil and bake for another 10-15mins until cheese is bubbly and melted.
serve with garlic bread and a caesar salad.

Fish Tacos:
1lb of tilapia/mahi-mahi fillets
1tbps chili powder or of your favorite taco seasoning
1 bottle of hot sauce
2-3tsp oregeno
2-3tsp crushed red pepper flakes
few tortillas flour or corn
+your own toppings
my suggested toppings:
taco sauce,cheese,sour cream and romaine lettuce.it is good!

preheat oven to 375 degrees. spray nonstick spray on a cookie sheet. lay out fillets in a single layer. put 2-3 drops of hot sauce on each fillet and spread it around to cover whole fillet, then sprinkle each fillet with the chili powder or taco seasoning (you can add more if youd like) the oregeno and the red pepper flakes. bake for 20-25 mins until fish is fork tender and done. warm up tortillas and place fish on the tortilla and cover with toppings and enjoy.

LOL well you'll notice where i say to put 2-3 drops on each fillet so you don't use the whole bottle.

Geez man, this thread has been dead for far too long!:) I need real food. Hehehe

I was looking for some bread making inspiration today for something different and I literally found something totally different in technique! I'll be trying this for the first time today or at least start the process as it takes about 24hrs. of waiting time. It's a basic yeast bread but with a bakery style crispy crust, large soft crumb and no kneading needed for the home baker! :shocked: I'm quite surprised that it took me over two years to find this as it's viral in nature. :confused

I won't post any recipes as these are covered in the following videos and links therein and tons of variations on google for 'no knead bread' but it's downright easy. I'll have to use the third video down in the Breadtopia link as I'm going to use a small 0.6 cu.ft. convection oven using a loaf pan this time but I'll move on to the Dutch oven method later on. I've always made bread the old fashioned way, I earned it! (Paper Chase reference).;)

This is for all you folk that like fresh baked bread without resorting to store bought chemical laden dough :sick or getting bulging biceps like me kneading the dough for 15 minutes, this is for you. The basic bread is four ingredients plus time. I can't wait! :drool: ^*^ My pics and comments to follow.

Algis, you must be psychotic, psychic, physic, well one of those psy words, I was just thinking of looking this thread up last night.

You see what had happened was, I was trying (trying being the operative word) to make fried chicken. I consider myself a sorta amateur chef, but being able to make good fried chicken has always eluded me, so I was going to appeal to the masses here, to see if anyone had a excellent recipe and some hints at how to make fried chicken.
