Uninstall Windows 7 from Multi-boot setup

I have an old computer and last year I threw the beta of Win 7 on it to test it out. How it's setup is as follows: Disk 0 - Partition 0 -Windows XP Pro, Partition 1 - Windows 7 Beta, Disk 1 Windows Vista Business. I would like to remove Windows 7 and put some form of Linux onto it. My question is, how do I remove Windows 7 and still be able to access the other partitions since the boot screen won't be there any more.

with the drive/partition structure you indicate there should be no problem simply formatting the Windows 7 partition and then deleting the Windows 7 boot menu entry :yesnod:
