Xp SP 3 pro X64 isn't bad
but Vista Home Premium or Ultimate 32 bit is better

I'd suggest try whatever it is you use daily so that you've got some sort of a benchmark to check it out on, otherwise I think you need to use XP x64 or Vista x64 so that you can take full advantage of your hardware. Windows 7 x64 RTM gets released to TechNet and MSDN on Thursday or Friday so you may want to wait for that instead of Vista if you've got access
I was thinking about dual booting, but i probably won't. Yeah, i will wait for Windows 7 on Thursday or Friday. I've got access to both technet and msdn. So i'll be set
