Mail Server or just a way around the WordPress MU mail junk

I'm running my site on a .no-ip.org domain. I just was wondering... is it possible to setup a mail server? I've tried (with little luck) so I just assumed that it was impossible. If its not impossible, can someone help me (or at least point me in the right direction)?

If its not possible can someone show me away around all of this WordPress MU mail junk. It basically makes you setup a mail server on your server to work. I would like for users to make accounts and stuff like that but I can't log in because it needs to send me a password! Its just really annoying - especially because everything else seems to be working.

i found something about a mail server on no-ip but it didn't give inscructions.

btw, i am running XAMPP. I think it has like Mercury Mail built right in.

I would think that if you configure the mercury mails server to work only for localhost and then tell your WP install to use that mail server on local host you can get some results. But I have never really played with Mercury so I could be way off. Good luck!
